I love my veggies! I will sing the praises of vegetables any day! I know, a lot of people don’t agree with me but they definitely are good for you!
Broccoli is one of my favorite vegetables. You can prepare it many different ways. Some people add a cheese sauce to it, but I prefer to keep it a little healthier.
I like to roast mine in the oven, which simply means cooking with a dry heat until desired tenderness is reached.
A little olive oil, pepper and garlic salt is all you need! I buy the packaged broccoli from Kroger. It’s already cut into florets and prewashed and ready to go, plus it saves you a lot of prep time!
I usually make this in big batches since I eat a lot of broccoli each week. I will do 2 packages of broccoli at a time (these are 2 lbs. each) so if you don’t want to do that much, just adjust your seasonings accordingly.
Preheat your oven to 425 degrees.
When using 2 packages of broccoli , be sure to use 2 cookie sheets. You want an even layer of broccoli so it roasts evenly. Line each cookie sheet with aluminum foil and spray with cooking spray.
Place broccoli on cookie sheets and drizzle with olive oil. Toss with your hands to coat evenly.
Season with garlic salt and pepper.
Place in preheated oven and roast for 25 minutes or until desired tenderness. Check it to make sure it doesn’t burn!
